Kildara was married from a  select combination of Kentucky Bourbon, Spanish Oloroso, virgin  American, and Spanish Pedro Ximénez (PX) casks. The result is a full  bodied, triple distilled single potstill, island whisky with pronounced  Oloroso and PX notes including dried fruit cake, vanilla crème laced  with cinnamon, demerara sugar, and old seasoned leather notes.  46%

Aged in an electric box, wired with time-altering devices (heat, pressure, and recoopered dismantled wine barrels.) This whisky is aged in 1/1000th of the time. BC's FIRST sour mash whisky. Extracting mysticism from the barrel, the sour mash illuminates our whisky with a sweeter, punchier flavour profile. Legend has it, this twist borrowed a trick from sourdough bread. Adding acidity is like tuning a vintage autoharp, or playing acid jazz - adjusting the PH levels for a transformative taste. - 50%%

This single barrel canadian whisky made from 80% BC corn and 20% BC barley was aged in recoopered okanagan wine barrels that we charred in house at the distillery. On the nose you can expect notes of ripe cherries, warm caramel, marzipan, toasted oak and butter. On the palette it will hit you with spiced apples, vanilla, roasted almond and white pepper followed by a finish with highlights of honey and more vanilla and cherries. - 43.7%

Field Five Farm in the Saanich Peninsula grew moon under water some “Bloody Butcher” grain corn back in 2021 that they, malted, brewed, distilled & aged! This “bourbon-style” Canadian whisky is a rich, warm hug of caramel & vanilla flavours up front and finishes with a spicy tingle of cinnamon and spice. Made from 55% corn, aged in fresh charred American Oak.- 40%

created in partnership with the burns bog conservation society. thanks to serendipitous timing, they were able to secure a small amount of burns bog peat that was then used to smoke the malt for this whisky. Prospector is 100% Northern BC rye, transformed into liquid, steam, and back again. It is then coaxed into new, heavily charred American White Oak barrels. With a heady nose of brown sugar, dried prune, vanilla and oak, this full-bodied rye melts on the tongue into light spice and stone fruit notes, leaving with a crisp, dry finish like crackling leaves - 46%

Odd Society’s 10th Year Anniversary Celebration Whisky Boneyard is a testament to their whisky heritage. With an “Odd” nod to the Solera method, they collected a litre or so from every bottling session since they began releasing whisky in 2016, and have been saving it in two special casks. These casks became known as the boneyard. Rye, single malt, maple whisky, peated malt, and smoked malt were all married together in the boneyard barrels. - 46%

This expression highlights the magic of a beautifully brewed Saison-Style Farmhouse Ale, distilled to whisky, and then after 8 years of aging in custom toasted and charred white oak casks this beautiful whisky was filtered through newly emptied and charcoaled Okanagan Spirits Apricot Brandy casks. notes of candied apricot and citrus petals on the nose, followed by caramel, vanilla, and toasted oak - 45.5%
